Breakfast burritos. 4 eggs, 1 chicken sausage link (Roasted red pepper and asiago) cottage cheese, hashbrowns and an avacado wrapped in a tortilla. Oh and a huge glass of OJ!
Many of you already know my favorite breakfast:
Grated sweet potato, zucchini, and yellow squash grilled up in some coconut oil. Scramble in some eggs, sea salt, and cinnamon, and it beats french toast!
This one is excellent because you can mix and match to make it a little different every time. When I need some extra protein, I’ll throw in some sausage or ground beef. Other times, diced onion, broccoli, cauliflower, mushrooms, or pretty much whatever I can rustle up out of the fridge goes in. This morning, spinach was a tasty addition. Crushed red peppers and some salsa in place of cinnamon makes for a delicious spicy twist as well.
My favorite breakfast is easy: 3- or 4- egg omelettes, with just about anything for mix-ins (based on selection of fresh veggies or leftovers in the fridge). Might be leftover salmon, asparagus, and mushrooms and fresh parmesan one time, then stir-fry steak & veggies the next time, or the standby green onions, mushrooms, bell peppers, and tomatoes. Beat the eggs up with a little cilantro or parsley, then top the whole thing with salsa.
3 or 4 big slices of THICK bacon, or some good breakfast sausage, or even a small steak, on the side. A cup of good hot coffee. And maybe some fresh berries – strawberries, huckleberries, or blackberries are best.
Mother’s Bistro in downtown Portland has a killer scramble:
grilled portabellas marinated in garlic, olive oil & balsamic vinegar,scrambled with eggs, fresh sautéed spinach & asiago cheese = BOMB
This and a few shots of espresso from Billy’s shop and Im off to a good day.
At home its a few poached eggs with some sausage links, grilled mushrooms, onions, and peppers and a shot of whiskey…well not really on the whiskey, but my EVOO bottle is next to my Bourbons and sometimes I think, “What would whiskey and eggs taste like?”
toasted whole wheat bagel with almond butter and whipped honey followed by 3 eggs, cottage cheese, taco meat, avocado all in a torilla – burrito portion is compliments of Smith talking about it everyday for 2 months.
does it HAVE to be paleo bfast? ’cause I’m ALL over whole wheat (Kodiak cakes) pancakes with mini-choc chips mixed in, butter the pancakes, top with frozen strawberries/mixed berries thawed and mixed w a touch of sugar on top of that cover it all with and LOTS and LOTS of whipped cream!! Yeah-ya!! Free day in 3 days!
I read a pretty interesting post on I think it was crosstit invictus’s page about diet and it says to eat right only 90 percent of the time. I really think that I do better when I go paleo with a few cheats throughout the week. Maybe its cause I’m expending less calories worrying about the handful of hunny bunches of oats I ate and just flowin with it.

I don’t have a perfect breakfast. Whatever’s in the fridge.
I use to before Paleo. Now my meals are just meals, doesn’t matter what time of the day it is.

I’m changing my mind, when Maeghan makes that Turkey Kielbasa with sweet potato hash, and she throws on 4 sunny side eggs on it I’m in heaven.

Steve’s homemade chorizo with some eggs is the best! Even better with beans and tortillas, but I’ll settle for some sliced avocado.
